3-Ingredient Personal Baby Kale Salad: 4 Ways!
























It's March...the cold weather is taking its toll, winter meals are getting tiring, and it becomes harder and harder to think of healthy options as we start to yearn for the fresh food options abundant in spring and summer.  My favorite way to spice up lunch for myself is with exciting salads.  I'm going to share 4 winter salad options that require only 3 ingredients each and can be made using one big bag of baby kale as a base.
The Refresher:

-2 cups baby kale
-3 sections of fresh grapefruit
-1/4 cup sprouts
(black sesame seeds optional)

*Dressing of choice (I like a little lemon vinaigrette: 2tsp lemon juice, 1tsp evoo, 2tsp apple cider vinegar)
Protein Packer

-2 cups baby kale
-1 hard boiled egg, sliced or crumbled
-2Tbs lightly salted pumpkin seeds

*Dressing suggestion: Balsamic Vinaigrette
Green Meanie

-2 cups baby kale
-1/2 green apple, thin sliced
-1/4 shredded Brussel sprouts

*Dressing suggestion: Lemon Vinaigrette (see "The Refresher" for ingredients)

Ceaser Pleaser 

-2 cups baby kale
-Croutons (diced, toasted rough chunk break from loaf)
-Creamy ceaser dressing

Yum!  So there you have it.  Almost a week of easy, delicious personal salads for lunch or snack.  I thought I'd include a little shopping list below to make it even simpler to prepare:

Shopping List:


Large bag of baby kale
1 Pink grapefruit
1 small pkg of sprouts
1 egg for hard boiling
Lightly salted pumpkin seeds
1 green apple
Small pkg shredded Brussel sprouts (or you can shred them yourself!)
Loaf of crusty bread (for crouton making)

For Dressing:
1 lemon
Apple cider vinegar
Balsamic vinegar
Extra virgin olive oil
Ceaser dressing
