Blueberry Cake

In honor of the upcoming weekend, I'd thought I'd share a yummy, lazy breakfast treat. Perfect for cozy weekend mornings...
This blueberry filled cake is a fancier take on delicious cinnamon-y (say that ten times fast) muffins, and goes great with a nice big mug of hot coffee. Here's how it's done:
You Will Need:
2 Cups flour
1tbs baking powder
1/2tsp salt
1/4tsp nutmeg
2Lg eggs
1 cup milk
2/3 cup packed brown sugar
1 Stick melted butter
1tsp Vanilla
2 cups fresh blueberries
2tsp cinnamon
A few pinches of cinnamon sugar, for dusting: (1tsp cinn., 1tsp white fine white sugar, 1tsp brwn sugar)

PreHeat oven to 400degs, and grease your cake pan. Whisk together in a large bowl: flour, baking powder, salt, and nutmeg. In a separate large bowl, whisk together: eggs, milk, sugar, butter, vanilla. Add wet ingredients to the flour bowl and mix together with just a few strokes until the two are combined (do not over mix). Fold in your blueberries gently. Pour into your cake pan. Dust the top of the batter with plain cinnamon.
Bake for 20-30mins, or until nicely browned and a toothpick inserted in the center comes out clean.(about 5-7mins before it's done, I like to sprinkle with the cinnamon sugar mix.) Allow to cool on a baking rack, and serve.
Of course I had to sample a piece to make sure it was edible....it was;)

What are some other fancy breakfast things you like to make on cozy weekend mornings?
