Apple Walnut Muffins


Apple Walnut Muffins

Preheat oven to 400*. Grease 12-muffin tin(or line with liners).

In med. bowl whisk together:
1 1/2 cups flour
2 tsps baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsps ground cinnamon
 In a separate larger bowl, whisk together:
2 large eggs
3/4 cup sugar
 Stir in and let stand 5-10mins:
1 1/2 finely chopped, peeled apples (about two apples)
 Stir in:
5 Tbs melted butter
1/2 chopped walnuts (or you can use pecans or almonds chopped!) 

Add flour mixture to large bowl ingredients and fold in until just mixed, batter will be lumpy, DO NOT over mix (too much mixing "toughens" muffins) 

Bake approx 15 minutes. Allow to cool thoroughly, and Enjoy!



These are fantastic when they are fresh out of the oven...I like mine cut down the center, spread with a bit of melted butter;)
